NFS has been shaky for me on macOS going back to like 10.12. I switched to mounting my server's SMB shares instead and it's both faster and more stable.

You can definitely enable "thousands" and "millions" of colors in Mac models that support it in MAME. You can also have multiple video cards in machines with NuBus slots.

There's been some, but they more or less stopped talking once they got things functioning. And that's fine, their primary focus is closer to how Basilisk and SheepShaver work than what we're doing so a lot of it doesn't really translate.

You can in fact have up to 7 hard disks (1 for each SCSI ID). If you check -listslots, you'll see that -scsi:0, -scsi:1 -scsi:2 etc exist, one for each SCSI ID. By default, -scsi:6 is a hard disk and -scsi:1 is a CD-ROM. You can therefore do: ./mame maciici -scsi:5 harddisk -hard1 additional_disk.hd...

MESS will indeed play the death chime if you can provoke the ROM into playing it. On current SVN, just run the Mac LC III driver - it'll play the startup chime, wait a second or two, and then death chime. There's not really a direct PC analogy to the shortcuts Basilisk and SheepShaver take due to the very different software stacks, but if you boil it down to a pure "they're faster than MESS" thing it's on the right track.
