Basilisk II can run Mac OS versions 7.x through 8.1. SheepShaver can run Mac OS 7.5.2 through 9.0.4.

They are both about the same, in terms of setup. You can check the guides in the wiki.

Check the requirements of the games. Basilisk II emulates 68K Macintosh computers, while SheepShaver emulates PPC Macintosh computers. Use the emulator that best matches your requirements.

I've always had some random crashes running B2 in Windows. They just happen when running some program or another. I think the emulator went down when I tried to load the "About" screen in iCab, and when I launched "Doom." I haven't been able to bring about a crash since disabling JIT yesterday, but ...

Well, I haven't run SoftMac since about 2008. But maybe try experimenting with more ROM images. The Internet Archive has a massive collection you can download.
