I think Lion will be a critical point for Apple, as it will represent the point where user freedom and choice will gradually be replaced by a restrictive iOS-like environment. It's sad, but not really unexpected given Apple's behaviour of late.

A G3 can run early versions of OS X adequately. Since you'll be using it as a server, you wouldn't be doing heavy tasks anyway.

I wonder if they made iTunes for OS X Server 1.1? ;)

You may also want to consider an alternative but compatible audio streaming program, running GNU/Linux perhaps/

QuickTime 3.0? The latest version supported is 2.1.2 32-bit, and that's only with Win32s.

It's not QuickTime 4.0.3, but the crappy QuickTime Player 4.0.3 that causes Mini vMac IIx cannot play Cinepak 15fps movies (video part) smoothly. Menu bars are also not part of the X API. There is a beginning of a gtk port for Mini vMac, which has menu bars, but missing much else, and is not worth using yet. Are you sure about that? Notice the file manager in this screenshot: http://toastytech.com/guis/xfm.gif It doesn't use the GTK toolkit.
