In the OS X host, in the disc image's Get Info window, either set all user permissions to read-only, or check the "Locked" box. Then the emulated Mac OS will consider the volume as read-only. You should really do this with all images of CD-ROMs (Read-Only Memory).

The dates of the games you give are around or before the release of System 7. Tracked disc images don't work in SheepShaver. Putting the .bin/.cue files in a .iso just gives you back the .bin/.cue files in the mounted volume, as you saw. It's not going to be a very "small" guide, that's for sure! I'll want to describe certain things in detail so that newcomers to Linux VMs and networking will not have too much trouble. It'll be something you could link to in the AppleTalk guide. I'll have it up in the next week or so.

What I mean by point 3 is that you can remove that entire line from the scripts, not only the IP address and netmask. You don't need ifconfig to "start the tap device," as it says. The emulator does that for you.

According to the Macintosh Garden page for FrameMaker 7.0, this program does not run under emulation. Since it seems to be a classic Mac OS, non-carbonized application, there's probably no way to run it on an Intel Mac.

Sometimes programs that worked on 68k Macintoshes don't work in Basilisk II. I would try it in SheepShaver.
