Well, as far as I can see it works fine. What do you mean with "still doesn't work"? What does not work?

With all the windows open it is impossible to see what is what. Which are the disks mounted on the desktop and in which order do they appear? The top one is always the one you booted from, apparently a disk named "Mac OS 8.1". Which disk is that? It will also be the one that is at the top of the volumes list in the GUI. If it is the install disk and if you did install the OS, you should remove it from the volumes list.

I also see below the windows a "My Mac Volume" disk. If that is the disk you installed the OS onto, it should now be moved to the top of the volumes list in the GUI. In fact, if the OS was installed successfully onto this disk, best remove all other bootable disks from the volumes list.

By not working I mean that when it is the only bootable volume i just get the blinking question mark mac icon. The "Mac OS 8.1" volume is the one I installed from but is listed in the last position of the volumes I'm mounting at boot.

The "Mac OS 8.1" volume appears at the top on the BasiliskII desktop, so it is the disk BasiliskII booted from. When it is in the last position on the volumes list in the GUI, it is currently the only bootable disk in the list and none of the other volumes are bootable. If you installed the system onto one of the other volumes, that installation must have failed.

In that image you can see that the "System" folder has the two-face marker on it so it should be bootable, right? If I remove the 8.1 volume it doesn't boot. Can you point me to steps on creating a bootable volume? I can try it from scratch...

Yes, one would expect "MyMacVolume" to be bootable. Something must be not right.
Is the image file that contains "MyMacVolume" now available as the only file in the volume list?

You started that file by using Create in the GUI?
It was initialized in BasiliskII?
Was it initialized HFS or HFS+ (Macintosh Standard or Macintosh Extended)?
Did you install 8.0, or 8.1, or 8.0 plus 8.1?

I ask these questions because 8.1 can use both HFS and HFS+ formatted disks, but 8.0 can only use HFS formatted disks. If the disk was formatted HFS+ while booted in 8.1, and then only 8.0 was installed, the disk cannot be used as boot disk because 8.0 cannot use HFS+ disks.
