Hello, I am a Ubuntu Linux user and I followed the Sheepshaver guide, I noticed that if JIT was disabled I could not boot the Mac OS, I also noticed that Mac OS 9 has audio problems with the Old World Rom but finally I got it working at 100% percent.
I only have the doubt if I need the keycodes.zip because I use Linux configured in Spanish with a Spanish keyboard (Spain) as host and Mac OS 9.0.4 in Spanish with the keyboard configured in Spanish in the keyboard control panel as guest.
I would like to use keyboard shortcuts in Mac OS 9

I know everything about keycodes files to be used with SheepShaver builds compiled from kanjitalk755 source. I do not know where the source of these Korkman Linux builds is based on. So I can only give a general answer.
Normally, you will not be able to type all characters correctly on other than US English keyboards without a keycodes file. Maybe you cannot type ? and/or ¿ correctly on your Spanish keyboard? Using a compatible keycodes file should solve that.
I am not sure what you mean with "keyboard shortcuts". Depending on your keyboard (Mac or other) Option and Command keys may be reversed. You can check that in Key Caps (in Apple menu). Pressing a key on your keyboard will show which key is activated in SheepShaver.

Thanks for answering, I had the doubt if I could use shortcuts to capture the screen and similar, those included in the Mac OS

On a macOS host, Command-Shift-4 for taking screenshots is intercepted by the host. I do not know if it can work on a Linux host.
Commands as shown in application menus, will work in SheepShaver as expected. Any specific shortcuts you find missing?
