I've been running SheepShaver in 1024 x 768 for a bit now, but yesterday I increased the resolution to 1280x960 to make it a little easier on my eyes. It was strange, as when it first boots, it seems to go to that resolution, but then drops down to what I think is 1024 x 768. Any idea how I can get it to be a larger resolution (4:3) without having to go full screen?
My Mac mini will support 1920 x 1080.

You do not tell where you changed the resolution.
If you want it 1280x960 at launch, you set that in SheepShaver preferences. If you want that resolution to stick after launch, you need to choose that resolution also in Monitors control panel in MacOS9. The new resolution will appear as a choice in Monitors control panel after you launched SheepShaver with the the new resolution set in preferences.
